Chicken galantine. It is done.

Skinned it whole. Ground it. Pork Fat. Emulsified it. Spiced it. Spread it. Filled it. Rolled it. Bound it. Made stock. Poached it. Chilled it. Unrolled it. Sliced it. Ate it!

This was amazing.

It was so good. And knowing the amount of hard work and skill that went into it made it even more delectable!

The mailman just elevated my lunch hour. Holy Berkshire Pork God. I asked for skin on pork belly, which they said they’d have to cut fresh, how about 13 lbs fresh! This belly is bigger than my boston terrier! I love paying for 9lbs of belly and getting 4lbs fo free! Bacon curing will be in full effect as of 600PM today! I’ll split it up with a classic maple brown sugar, and perhaps a savory thyme/garlic/black pepper. There’ll be a couple pounds left over for beer braised pork belly sliders (whhaaaaattttt!).

The rib rack chops are going to be amazing. They look as beautiful as described. I’m planning a couple hour brine with alfalfa hay, a very quick cold smoke, and a sear and indirect heat to bring em to medium. Not sure on sauce and sides yet.

My Memorial Day weekend just started kicking a little bit more ass than it did an hour ago.

We are going to be eating good this weekend! Witnessed the cure begin last night. Tomorrow is full of prep and cooking- that is after Dave runs his first ever 5K race at 7:30 in the AM (joined by me and Mark, a friend in from Bloomington).

A western Indian state has declared war on animal poaching by sanctioning its forest guards to shoot hunters on sight in an effort to curb rampant attacks against tigers, elephants and other wildlife.

The government in Maharashtra says injuring or killing suspected poachers will no longer be considered a crime.

According to the Wildlife Protection Society of India, 14 tigers have been killed by poachers in India so far this year — one more than for all of 2011. The tiger is considered endangered, with its habitat range shrinking more than 50 per cent in the last quarter-century and its numbers declining rapidly from the 5,000-7,000 estimated in the 1990s, according to the International Union for Conservation of Nature. Our Austin vacation is coming to an end. In an hour we will leave for the airport and head back to the Ole EP. Austin is always a good time and this trip was no different. I’ll get to some highlights, but first a re-cap of our day yesterday.

7AM - Took Dave to work

9AM -35 min run on the Town Lake Trail - a 10-mile trail that runs along Town Lake (which is part of the Colorado River) in Austin. Completed my first mile in 9:23, which is pretty damn good for me.

11AM -waited for The Black Keys tickets to go on sale and snagged 10th row seats for the show in Las Cruces in October!

Lunch - FoodHeads - Delicious! Huge patio with picnic tables and shade umbrellas. Got the Pork Special (roasted jerk pork loin and bacon on toasted telera bread with lime slaw, tomato, and spicy pineapple relish), had some home-squeezed lemonade and read my kindle for a while. I think I blended in amongst the college kids (good or bad?) and eavesdropped on some conversations that reminded me how awesome it is to not be in college anymore.

After lunch beer - Snackbar - killing time till I pick up Dave from work - had a 512 Wit while reading my Kindle on the patio

3:30PM - pick up Dave from work!

5:00PM - drive 1.5 hours to Hudson’s on the Bend. Let me just say we’ve been drooling over this restaurant for months. It did not live up to the expectations. The food was good but the vibe in that place was just bad all around. Would have rather spent $100 at Uchi.

10PM - The Ginegerman, Stony’s Pizza, and Lovejoys - good beers with some EP friends. Also, eat at Stony’s, live forever!

1:30AM - Coreanos! - Porkbelly tacos!!! spice twice-cooked pork belly, korean slaw, onions, cilantro, sesame oil vinaigerette. This was the best food we had all day, including the fancy dinner. The best. Sweet, spicy, salty, sweet, and crunchy. So so good!

Ok have to go pack to head back to EP :( Highlights later on.

Got my M&Ms and Gatorade, got my Stubb’s and Texas beer. Sat through a not fun, but not too long session and came out the other side with this! Eggs n bacon!

Now for the healing, which is worse than the actual tattooing in my opinion.
